Curds are pressed for approximately 30 minutes in the tower and then Voila! A block of Tillamook cheese is born. Although they are called "forties," these blocks actually weigh between 41 and 42 pounds. Tillamook cheeses are naturally aged the old fashioned way with time. After being bagged, vacuum-sealed, boxed and cooled, forties are sent to the warehouse for aging.
